The other day when I told you I was trying the weekenight lasagna toss and told you I would give feedback on it? Well, Jade surprised me with take-out the original night I was supposed to make it. How can one resist takeout? I made it Sunday and it was good. It wasn't as good as a pan of lasanga, but it was quick, easy and tasty. I would recommend.
I threw some garlic bread in the oven to eat with our lasagna, but I also put together a salad. A "normal" salad wasn't sounding too appealing that particular night and I have been (and always will) craving feta cheese. Do you like feta? I LOVE feta. I could eat it everyday. Anyway...I decided to make a chopped salad, Leslie style. :)
I chopped regular iceberg lettuce, red onion, tomato and cucumber into small pieces and added to a big bowl. I stuck a handful of feta in, too. For the dressing, I made the following:
Fresh Herb Vinaigrette
1/3 cup EVOO
1/3 cup red wine vinegar
3 Tsp. sugar
1 TBS. freshly snipped thyme
1/4 tsp. dry mustard
1 clove garlic, minced
1/8 tsp. black pepper (I just used a dash)
Mix together with a whisk and you have a delicious dressing.
I tossed this into the salad so my salad was completely coated with dressing. It was sooo good. So, if you are ever in a salad rut, give it a try. It has my approval.

I always wonder about putting mustard of any type in something for me to eat. I cannot stand even the smell of it. I don't know if dried mustard is the same.
