Tasty Tuesday

Just thought I would pass a delicious recipe along to you all. Just to warn you, I am not really sure "exact" measurements, I just kinda wing it. :)

Quesadillas...The way my mom makes them.

1 lb. boneless, skinless chicken. cubed and cooked on the stove. When done, put in bowl and set aside.

1 can of black beans. Drain the juice and rinse them with cold water. Put in bowl and set aside.

In yet another bowl, take a cup or two of miracle whip and mix with your choice of hot sauce....we LOVE Valentina. Its not too hot, it just has the perfect taste. I put in enough to make it taste good. You be the judge. Remember, I told you this was going to be a impromptu recipe. :) You could put chunky salsa in if you want to.

Cheese ((colby jack or the mexican blend))

The large size tortillas ((flour))

So, here is what ya do...Take a large pan, spray it with pam so your food doesn't stick. Take a large tortilla and lightly spread your miracle whip/hot sauce mixture on the entire thing. Then, sprinkle chicken, black beans and cheese on half of the tortilla. Fold in half. After pan is hot, cook until lightly brown on both sides.

I like to use one tortilla and fold in half. It is a lot easier than putting your goods smooshed together between two...it is a pain to flip in the pan.

We like to top ours with shredded lettuce, salsa, more cheese, guac and no mexican is complete without mounds of sour cream....and I wonder why I cannot shed these last few preggo pounds!

We make quesadillas regularly around here, but I never use black beans and now, I don't know why. They are so yummy!

I 2nd Danifred - I love black beans, and never think to throw them in when I make quesadillas! Thank you for sharing - my own recipe isn't quite doing it for me lately, so I am excited to try these.

I'm always making enchiladas, but I will have to try this. It's the Miracle Whip & hot sauce I cannot imagine :)
