Once again, I am late posting. Forgive me, friends. It has been a long week.
Monday:Leftovers. It was a great way to kick off the week. No cooking! My kinda Monday. Plus, our fridge of clean.
Tuesday:Spaghetti and salad. This was a request by Reyna. The girls had strawberries & peas with their dinner and their plates were spotless post dinner. They have had great appetites lately. It is so nice.
Wednesday:Breakfast.Omlettes with green peppers, onions and cheese, sausage and toast
Thursday:Beef stroganoff. I cannot remember why, but we never had this last week. It is such an easy meal+ the girls love it.
Friday:Fish fry @ Casa de Collins. Last year, we went out most Fridays for fish, but Ruby is somewhat shall we say naughty whem it comes to sitting and eating dinner out. Soooo....we are having my family over for fish, coleslaw,baked potatoes, green beans and I am thinking either brownies or cupcakes. It will be Reyna's choice on dessert.
I don't know about you, but I am looking forward to having meatless Friday's during the Lenten season. I was incorporating one meatless meal into our menu, but sort of fell out of habit.

Not really giving up anything here, focusing more on positive habits and sending more positive energy then negative out into the world (this may be quite hard at times but I have hope).
I am also looking forward to meatless Fridays, and with John being more open to fish after my homemade fish sticks were a hit it shouldn't be too hard (plus there's always pasta).
Spaghetti is always a huge hit at our house as well! I love meals with no complaints and clean plates.
