Monday:Chicken + black bean quesadillas. I love these. I probably could put them on our menu once a week.
Tuesday:Leftover spaghetti and meatballs with homemade garlic toast and salad. Last week's spaghetti produced a lot. I thought about freezing half, but decided just to save it for this week.
Wednesday:Panko crusted salmon Has anyone tried this? I am looking forward to this one? I am going to pair it up with some sort of noodle dish and fresh steamed green beans.
Thursday:Shepards pie I wanted something easy.
Friday:Leftovers for the family. I have a dinner night planned out with some really fun ladies!!! :)

both of these recipes look awesome! i'm going to have to try them. i always need a reminder about shepherd's pie. that is generally a winter staple for us!!
