Menu Plan

Monday: Ribs in the crockpot seasoned with rib rub, salad & baked sweet potatoes.
Have you ever made ribs in the crock pot? I am not sure if I will ever want grilled ribs again. Not only were they effortless, they were fall off the bone, delicious.

Tuesday: Crockpot potato soup. I would like to dedicate Tuesday's to crockpot night. Jade starts tennis next week and Reyna has gymnastics. Rush, rush, rush. 

Wednesday: Salmon, red skin potato salad & steamed veggies

Thursday: Leftovers

Friday: Pizza. This will also be easy since I made two crusts and froze one last week.

I have been really busy in the kitchen lately. I know this sounds really "Martha like," but I started canning this year. Crazy, right? I made dill pickles a couple months ago. Today, I put our small tomatoes to good use. I will definitely make a couple more batches of the jam since it doesn't make a lot. I made pureed tomatoes and froze those for homemade spaghetti and I have also been blanching our green beans and freezing those so we will have fresh green beans all winter. I have 8 lbs. of jalapenos that are getting canned tomorrow. 8 lbs.!!!!! It does take a little time, but I love having all on hand.

This has nothing to do with canning, but these are on the "to bake" list this week. I picked up the stuff for them yesterday and I can hardly wait to sink my teeth into them. They look soooo delish.
