Of course I was productive today by getting a few much needed things done. One of our flower beds is completely weeded and I still managed to hang wit Reyna while doing so. She dug for worms and helped me while Ruby took a nap. The TV did not babysit my children much this morning, I made sure we played, laughed and had a good time. This afternoon, we piled into the van and headed to Cascades. And of course, we couldn't leave w/out a flushie (green to be exact) for Bug and a heaping mount of mint chocolate chip for me. Ruby was pretty cranky today due to her teeth, so she was a little more demanding of my attention, which I did my best to sympathize, although I wanted her to feel a tad bit sorry for me and my crap night of sleep, as well. I know teething sucks for babes, but what about parents???!!!!
After Ruby went to bed, Reyna & I played Candyland and read a few books before I tucked her in, so I definitely feel like I was a "good mama" today, but I wish that I had it in me to just do nothing on my day off. I wish sometimes that I didn't care that there was dishes from dinner sitting on the counter or laundry or weeds or anything. I wish it were simple for me to just sit down, watch TV and not feel like I should be doing something else.
Okay, so let me end this post with a tasty recipe. I will warn you, it might not be the healthiest, but whatev.

Layered Mexican Bake
The goods:
1- 1/2 pound ground beef (I think I use a whole pound)
1 large onion, chopped
2 green peppers, chopped
4tsp. chili powder
1 cup of chunky red salsa
20 oz. frozen corn
6 whole wheat tortillas 8 inch ones
1 cup sour cream
sharp cheddar cheese (It says 1 1/2 cups, but I just sprinkle as needed.)
Prepare it:
Brown meat with onions and peppers in large skilled on med. heat. After meat is done, stir in chili powder, cook 1 min. Add salsa and corn, mix well and let simmer for 5 min.
Spread 2 cups of meat sauce onto bottom of 13x9 baking dish; top with layers of 2 tortillas. Spread some sour cream, more meat sauce and sprinkle with cheese. Repeat the process. You should repeat so you use 6 tortillas total.
Bake 30 min. @ 375 for about 30 minutes or until heated thru and cheese is melted.
I didn't have chili powder in the house, so I used a few teaspoons of a taco seasoning packet, which tasted just as good. And, the first time I made this, I didn't have whole wheat tortillas, so I just used regular, which works too.
If you try this recipe, let me know how you like it. I will say this, Reyna gives it a 2 thumbs up. There was nothing left on her plate tonight.

I have a very similar recipe that uses black beans instead of corn and it is delish, I think I'm going to make it tomorrow now.
It is hard on days off for me too, I spent 7 days working to get 2 measly days off and 1/3 of me want to just be lazy, 1/3 want to make the girl happy all day, and a 1/3 wants to catch up on the stuff I put off for 7 days. Sigh.
Yum, that sounds so good. I took Lincoln to the park yesterday to. I was thinking the same thing yesterday as Rob was out washing his truck. I was doing dishes, cleaning up the kitchen and taking care of a fussing lincoln. all I wanted to do was relax for 5 mintues.
Sounds really good! I will have to give that recipe a try!!
And I know what you mean about wanting to get the scrap stuff out but just not doing it. I never can seem to get my stuff out!!
I have an overwhelming drive to get "things" done, regardless of what my intentions were. It's hard to keep a balance.
We are having the same issue with Brady. The last three nights he's been up every 2 hours! no fun!!

I know what you mean about being a "good mama". Sometimes I find myself so focused on getting things done and thinking G is "in my way" that I don't take the time to just let some things go and enjoy just being with her. Life goes my so fast and things change so quickly. Definitely something I am trying to work on :)
I have a recipe, very similar, we call it Taco lasagna! We use taco meat and also black olives! Super yummy!!
I'm sorry little one has kept you up....Jaxon is doing the same as well! I'm beyond ready for the teething issue to be over already!
