Back to the grind. I have failed miserably the past two weeks planning anything for din din. I don't feel like the holidays are truly over until after New Years.
But, we are in for a delicious week. I am slightly excited!
Monday:stuffed chicken breasts, twice baked potatos & salad. I am suuuper excited for the salad portion. Jade surprised me with a new kind of dressing and I have not tried it yet. Do you like Annie's dressings? He picked up a bottle of the roasted red pepper and I am dying to drizzle it on my salad tomorrow night.
Tuesday:homemade vegetable beef soup. Jade plays tennis on Tuesdays and I like to put something together early in the day so I am not cooking with kids hanging from my legs. Reyna will probably help me put this together in the morning.
Wednesday:Tacos. I am hoping to pick up some good avocados so we can make this meal complete with guac.
Thursday:Stuffed shells with salad & garlic toast. I have aerobics and I like to have something in the oven so when Jade walks in the door, dinner is ready for him and the girls.
Friday:Leftovers or dinner out.
So tell me, do you meal plan? If so, what are you eating????

Ok...I'm curious, what kind of stuffed chicken, do tell! I also make twice baked potatoes (my kids favorite!) but I'm curious about yours. Maybe a recipe post in the future??? Glad you had a great Christmas and New Years!!! Take care :-)

Yes, I do meal plan! My meals for the week are as follows:
Monday: Chicken and Spinach Quesadillas
Tuesday: Fontina Mac and Cheese
Wednesday: Cheddar Corn Chowder Soup
Thursday: Left-overs
Friday: Hamburgers

I am not as good about meal planning as I would like to be - though with hubby gone as often as he is, the 2 or 3 meals that I plan are often enough (the kids and I go simple on the other nights . . . chicken nuggets, pierogies, spaghetti, mac and cheese, etc.)
I don't know if I have had any of the Annie's dressings, but I just recently had some Drew's dressings (organic) - it was so good!
