I have been a serious slacker. Blogging, laundry, returning phone messages, wanting to get up in the morning. You name it, I am lazy in EVERY department right now. Jade & I discussed tonight how we need to start getting up a little earlier. I am finding my groove. It is just taking a little time..
Anyway....food + meals+ this week. Better later than never, right?
Monday: Burgers, noodles & veggies. This was a hit with Reyna. She ate her entire burger! Ruby? Not so much. She decided against napping today and was too tired by the time din din rolled around.
Tuesday:chicken stir fry w/ white rice.
Wednesday:Pizza.
Thursday:Chicken & angel hair pasta. As always, I do something easy on Thursdays since it is my night to go exercise.
Friday:Grilled dill mustard salmon, salad & potatoes

Manda over at The MiniVan Diaries asked what kind of stuffed chicken breasts I make and how I make my twice baked potatoes. Well, the stuffed chicken breasts are not my recipe. Meijer has yummy stuffed chicken breasts in their freezer section and when they go on sale, I pick them up. We had brocoli & cheese stuffed ones last week. I wish I could take credit for them, but I can't. Now the twice baked potatoes, I can take credit for.
Bake 4-5 potatoes until tender
Cut in half & scoop out the potato part
(bear with me, I don't measure too often)Take the scooped out potatoes, about 1/2 cup sour cream,1/4 cup ranch dressing,1/4 cup shredded cheddar cheese & beat with beaters until fluffy.
Stuff potatoes with mix & bake until golden
