Menu Plan Monday...just on Wednesday!!!

In the Summer, my crockpot gets booted out of the way and gets replaced with the grill. Now that Fall is definitely in full swing here, my crockpot is back out and is being used once again. I am using it three times this week if you count the roast I cooked on Sunday.

Monday:We ended up at Jade's mom and dad's. It was going to be a leftovers night though.

Tuessday:Sopa (see pics and recipe below),pinto beans (dry not canned) slow cooked all day, warm flour tortillas and cheese. I know it kind of sounds like a weird meal, but it is really good. I LOVE slow cooked pinto beans lightly salted. They are yummy.

Wednesday:Crockpot potato soup and cheddar biscuits. Not the healthiest day, but one of the yummiest!
I know I have raved about this soup before, but if you have not tried it, make it! It's sooooooo yummy.

Thursday:Leftovers and possibly din din out. We have a busy day.

Friday:Pizza!

Sopa or Sopa de Fideo




*1  pkg of fideo (you can find it in the Mexican aisle at the grocery store. It's like 35 cents a bag!!!!
*1 1/2 cups water with 3 chicken bouillon cubes
*canola or veggie oil
*1 can of DelMonte Stewed Tomatoes (I have always used the Original Recipe)



*Coat your pan with about 3 tablespoons of oil and put your package of fideo in there and let it brown (this is about how brown I let it get in the picture below)

*While this is cooking, put your water with bouillon in the microwave and heat to a boil or until your cubes are melted.

*While this is cooking, blend your tomato to a puree in your blender.

Once your fideo is brown enough, add water and puree. Be careful. It will be hot! Bring a boil, turn down to a simmer, stick the lid on and let cook for about 45 minutes to an hour. I usually stir it once or twice, but try not to touch it. I think it turns out better the less I mess w/.


I feel like I have been in my kitchen a lot this week. Yesterday, Reyna & I put together crock pot applesauce.
Talk about making your house smell soo yummy!
