Menu Plan Monday

Monday:Meatball subs & steamed asparagus. I made spaghetti & meatballs a few days ago and we used the leftovers for tonights meal. I bought sub buns, fresh slices of mozzerella. We also topped our subs with green pepper, red onion and lettuce. Dinner was definitely a hit and I will keep this idea in mind the next time I make spaghetti & meatballs.

Tuesday:White bean and fennel soup. I should have saved this recipe for Friday because it is a meatless soup, but I have a bag of spinach that needs to be used.

Wednesday: Breakfast....Smoothies included!!!

Thursday:Spicy bean burritos & sopa

Friday:Blackened salmon, grilled potatoes with fresh dill, salad
